"Very Simple! Use the best and freshest ingredient; use the correct preparation and cooking methods. Let the ingredients be the Hero!

What is Your Favorite Cuisine?
"In my 25 years of cooking I have been inspired by all major cuisines of the world. It would take a couple of pages to express my admiration and respect for all of them."

What is Your Favorite Dish to Prepare?
"I am in the lucky position that I have a good number of dishes that I have learned to prepare to perfection. It has taken me 25 years of cooking for a living in eleven countries. (Nothing against the Chefs Stars on TV!!) Truffle Risotto filled Baby Chicken with Chanterelles and Runner Beans is definitely on the list of favorites. "

What is Your Favorite Beverage?
"New Zealand Sauvignon Banc when I am eating Grilled Red Snapper with a good side salad. Any earthy oaky full-bodied Mediterranean red wine for a good old-fashioned Spaghetti Bolognese and bottles of Heineken when I am with friends"

What Do You Cook for Yourself if You're Hungry?
"The sign of a good chef is to make a miracle out of whatever ingredients are available. I open my fridge and see what's there and make a menu. Cooking usually takes no more than 15 minutes. I end up with things like Spanish Omelette, Spaghetti Carbonara or Pork Schnitzel with a good salad,etc. I cook at odd hours and see what I can scavenge."

"I would prepare a typical Austrian sausage and cheese orgy with different mustards, sauerkraut, and oven fresh Austrian breads and draft beer."
