Dear "Guam Food Guy" Reader,
"Whew, what a relief!" Supertyphoon Kujira was a close call that left us literally "high & dry" since not much rain fell but I am not complaining. Instead, I want to touch on some highlights of the past weekend's PHARE show. First, kudos to the winners of the "Tropical Challenge" and the "Beef Up Guam" competitions that were held on Friday and Saturday. The Tropical Challenge was a competition involving the use of Philadelphia Cream Cheese as a main ingredient in the entry.
Although all the contestants created fabulous dishes, Sam Choy's dynamic duo swept the awards. Sous Chef John Fernandez, Jr.'s entry, a Crab & Cream Cheese Won Ton with Mango Marmalade, won 1st Place and the People's Choice Award while Executive Chef Peter Duenas garnered 2nd Place position with an inspired Spicy Boonie Pepper Philadelphia Cream Cheese Shrimp Roll!
Saturday's "Beef Up Guam" competition required the use of Yamasa Soy Sauce with Prime Rib provided by Quality Distributors. The 1st Place title went to Pacific Islands Club Sous Chef Ronnie Guillermo and his Hibachi Tender Beef Roast Kebob; 2nd Place was Onward Resort's Sean Huey's Beef Oshi Sushi; and 3rd Place honors went to Hilton Resort's Alvarez "Toto" Esmeraldo, who entered a BBQ Prime Rib Iban Style. People's Choice Winner was the Westin's Terry Hamada, with a phenomenal original creation - Soya Marinated Sliced Roast Beef Wrapped In Savoy Cabbage and Mushroom Ragout, with a Soya Red Wine Sauce - fabulous!

Easter Specials Abound - Sam Choy's, Palm Garden, Hilton, Nana's Cafe, etc.

Nana's Cafe & Blue Marlin Restaurant - At Nana's, Chef Kishimoto has created a choice of entrees (Sea Bass & Honey Fried Shrimp is one) to enjoy with the all-you-can-eat salad bar, appetizers and dessert bar. You can't beat the view from this location. Theatre Guam Debuts "Tale of the Allergist's Wife" - April 18, Guam Reef Hotel
WARNING! The play you are about to see will create a condition of serious laughter and will significantly impair your ability to keep a straight face. It is suggested that you wear loose clothing to avoid fabric damage caused by paroxysms of laughter. The "Tale of the Allergist's Wife" is a comedy by Charles Busch and will be performed by that zany troupe of thespians known as Theatre Guam. Dinner theatre performances are set for April 18, 19, 25 & 26 at the Guam Reef Hotel's Pandanus Room, with tickets selling for $100 per person. Cocktail performances are set for May 2, 3, 9, and 11, with tickets priced at $25. The proceeds will benefit the Make-A-Wish Foundation. Two Saipan performances at the Dai-Ichi's Hibiscus Hall will be held, a dinner show on May 16 and a cocktail show on May 17. For reservations and ticket information call 649-9474.
UOG Endowment Foundation's 2nd Annual Celebrity Chefs' Cup - April 21
This exciting fundraising event raised the bar on fun and food last year. People loved the idea of teaming up local chefs and personalities with each team creating one of the courses and then the diners voting on the various dishes with the winning chef being announced at the end of the evening. The Hyatt Regency Grand Ballroom is once again the stage for this exciting fund-raising event from by the UOG Endowment Foundation along with the Micronesia Chefs' Association. This is a multimedia event with live action video from the kitchen being broadcast to big screens in the ballroom. Here are the "Chef Teams" for this year:

Le Tasi Bistro's Wine & Cheese Happy Hour is "Tres Magnifique!"
Hagatna's Le Tasi Bistro has launched a Tuesday evening Wine & Cheese Happy Hour from 5pm -7pm. Every week a selection of wines will be available for tasting with the first glass included in the $15 fee. Around the Island - Roy's "Ladies", Okura Cakes, Lee Garden Specials & More

This brilliant concept hits the "bulls eye" by providing a sophisticated after-hours destination for ladies to relax and unwind while sipping cleverly named cocktails. "Gin Darlings" is just one of the flights of fancy and includes the 'Halle Berry' (gin, lemon juice, grenadine). A 'Frida Kahlo' (Cuervo, lemon juice, sugar) is one of four "Tantalizing Tequilas" while the 'Lady Li Wei' (rum, apricot brandy, orange curacao) is from the "Rum Ladies" drink quartet. Uncle Bob's in Sumay (just outside of Naval Activities Main Gate) is still open for business and is cooking up its trademark Gargantuan steaks! These are eye-popping chunks of quality beef, seared on the outside and basted in a secret sauce. These are steaks so huge you have to see to believe, and the prices are even more incredible! This is a no-frills steak experience, with zero emphasis on atmosphere or service...you are there for the steaks. Period.
The Lumpia House in Barrigada is drawing raves from many loyal customers who continue to enjoy their hefty $5.00 lunch specials. You won't believe the size of their Fried Spare Rib plate! The Fried Chicken is a taste treat too but the Lumpia reigns supreme.
Al Dente Italian Ristorante - A Sensational Authentic Taste Adventure
"When in Rome, do as the Romans do" is an all-too-familiar quotation which offers sage counsel to global travelers. It is apt advice, as well, for culinary adventurers who explore the tables of the world for original native cuisine experiences. Fortunately you don't have to travel too far for an authentic Italian experience whose creator hails from Rome. Bravo to Chef Enrico Rodati, Chef de Cuisine of Al Dente at the Hyatt Regency Guam for a splendid menu selection of classic Italian favorites that will make your dinner a memorable pleasure that bears repeating.
Chef Rodati is a visiting 'chef on loan' from the Hyatt Regency in Osaka. The wonderful gift Chef Rodati has brought is a magical menu of delightful eats. Al Dente is currently running a month-long Mondavi celebration, and they are featuring a special wine pairing menu. Among the featured wines are a Danzante Pinot Grigiio and Danzante Sangiovesse.
To appreciate the breadth and scope of the types and styles of food comprising Al Dente's menu, I recommend that you go with a small group of dining companions and order appetizers and entrees that you can share. This is precisely what we did recently. Starting with appetizers, I ordered the Piatto di Antipasti Misti, (marinated shrimp, scallops, mussels, peppers, olives, salmon, vegetables, capers, and prosciutto $15). This was a superb way to "jump start" one's appetite. Another stand out was the Insalata di Spinaci Con Parmigiano E Pinoli (baby spinach with shaved parmesan, roasted pine nuts and sundried tomatoes with a citrus vinaigrette $9). This delivered everything promised by its elements.
