Low Fat Bran Muffins
1 cup flour
1 1/2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
2 cups 100% Bran cereal (not bran flakes)
1 1/4 cup low fat/skim milk
1/3 cup brown sugar
1 egg (or equivalent egg substitute)
1/2 cup applesauce
Heat oven to 400F.
Mix cereal, milk and brown sugar in a bowl. Let stand 5 minutes until cereal is softened. Stir in egg and applesauce until combined. Mix flour, baking powder, baking soda and cinnamon in another bowl. Add cereal mixture to flour mixture. Stir until just moistened. Add raisins if desired (Dried Cranberries are good, too). Spoon into muffin pan sprayed with no stick cooking spray, filling each cup about 2/3 full.
Bake 18 to 20 minutes until golden brown. Serve warm.
