2 Chicken Breasts - cut into strips
1 large Green Bell Pepper - cut into strips
1 large Yellow Bell Pepper - cut into strips
1 large Red Bell Pepper - cut into strips
1 medium Red Onion - sliced thinly
2 green Jalapeno peppers - finely chopped
2 Limes - cut in half
3 Garlic cloves - finely chopped
1/4 bunch Cilantro - leaves only
3 - 4 tbs Olive Oil
Chop the Garlic and Jalapenos then warm the oil in a non-stick skillet add the Garlic and Jalapeno - remove from heat and allow the oil to absorb the flavors while cutting the rest of the ingredients Brown the Onion and Chicken - stirring often 3 - 4 minutes Add the Bell Peppers cook for an additional 5 minutes Squeeze the Limes over the Chicken/veggies and toss in the Cilantro. Stir, cover and cook on a low flame for 10 minutes or until Chicken is done.
Serve with Tortillas and your favorite beans and Salsa and Enjoy!
