Greek Style Chicken Breasts with Herbs


2 chicken breasts with skin & bone
4 tsp olive oil
salt & freshly ground black pepper
2 oz feta cheese, crumbled
2 tsp chives, snipped
2 tsp parsley, chopped
1/2 tsp rosemary, chopped
1/2 tsp thyme, chopped
3 tsp parmesan cheese, grated
1 clove garlic, crushed

Preheat oven to 375F. Rub chicken with olive oil and season with salt & pepper.

Mix remaining ingredients together. Use fingertips to loosen the skin from each chicken piece, being careful not to tear skin. Insert stuffing under skin of each chicken piece, small quantities at a time, between skin & flesh , distributing & mounding it from outside with the hands. Place, meat side up in Baking dish, roast about 10 min, then reduce temperature to 350F & without turning, roast a further 20 to 25 minutes, basting 2 or 3 times during last 15 minutes. Serve with roast potatoes & grilled veggies.
