Sesame Lime Chicken


4 to 6 chicken legs, skinned
4 to 6 chicken thighs, skinned
1 medium onion, chopped
3 to 6 cloves garlic, finely chopped
1/2 cup fresh lime juice
1/4 cup soy sauce
1/4 cup dry sherry
1/4 cup orange juice
2 Tbs grated fresh ginger
1 Tbs honey or sugar
1 Tbs hot chili oil (optional)
3 Tbs sesame seeds, toasted

Combine all the ingredients except the sesame seeds in a large bowl and toss to coat the chicken thoroughly. Refrigerate covered for at least 4 hours or overnight. Place the chicken and marinade in a baking dish and bake in a preheated 400F oven for 35 to 45 minutes, until done. Sprinkle with sesame seeds immediately before serving.

Yield: 4 to 6 Servings
