Chili Beans


1 lb dry red kidney beans
1 medium onion, chopped
2 - 4 cloves garlic, finely chopped
1/4 lb bacon, chopped
1 Tbs chili powder, or to taste
Salt and freshly ground pepper to taste
1 cup red wine or chicken broth
3 cups chicken broth
1 can (16 oz) chopped tomatoes

Soak the beans in water overnight. Drain and combine with the remaining ingredients in a large pot. Bring to a boil and reduce the heat to low. Simmer covered for 4 hours, or until the beans are tender and the sauce has thickened, adding more chicken broth if necessary.

Yield: 6 to 8 Servings
