1 ham hock
1 tsp crushed red pepper flakes
3 - 4 lbs collard greens, cleaned
and coarsely chopped
1/4 cup cider vinegar
1/2 small onion, chopped
1 Tbs sugar
Salt and freshly ground pepper to taste
Place the ham hock and the red pepper flakes in a large pot with enough water to cover. Bring to a boil over high heat, reduce the heat, and simmer covered for 1 hour. Add the greens and remaining ingredients and simmer until tender, 30 minutes to 1 hour, stirring occasionally. Serve with additional vinegar and hot sauce if desired.
The liquid remaining in the pot is referred to as "pot liquor." Serve with cornbread as a first course.
