Curried Rice with Apricots


4 cups chicken broth or water
2 cups rice
1/2 cup dried apricots, chopped
2 tsp curry powder

Bring the chicken broth or water to a boil in a saucepan over moderate heat. Stir in the remaining ingredients. Reduce the heat to the lowest setting and simmer tightly covered for 20 minutes - do not remove the lid. Fluff the rice with a fork before serving.

Yield: 4 to 6 Servings
