Herbed Green Beans


1 lb green beans, trimmed and cut into 1 inch pieces
1 Tbs olive oil or butter
1 medium onion, chopped
4 - 6 cloves garlic, finely chopped
1/2 cup white wine, chicken broth, or water
1 cup coarsely chopped canned or fresh tomatoes
2 Tbs chopped fresh thyme leaves
or 2 tsp dried thyme
Salt and freshly ground pepper to taste
Lime wedges for garnish

Boil or steam the beans until just tender, about 3 minutes. Drain and set aside. Heat the oil in a large skillet over moderate heat and cook the onion, stirring frequently, until tender but not brown, about 10 minutes. Add the garlic and cook an additional 2 minutes. Add the liquid, tomatoes, thyme, salt, and pepper and cook uncovered for 10 minutes, stirring occasionally. Add the green beans, stirring to combine well, and cook an additional 2 to 3 minutes. Serve with lime wedges.

Yield: 4 to 6 Servings
