Spicy Marinated Mushrooms II


1 lb white mushrooms, rinsed and stems removed
3 to 4 cloves garlic, finely chopped
2 shallots, finely chopped
1/2 cup extra-virgin olive oil
1/4 cup lemon juice
1 Tbs Dijon-style mustard
1 tsp dried oregano
1/2 tsp red pepper flakes, or to taste
Salt and freshly ground pepper to taste

Place the mushrooms in a mixing bowl. Whisk together the remaining ingredients and pour over the mushrooms, tossing to thoroughly coat them. Store covered in the refrigerator for 1 to 3 days. Serve chilled or at room temperature.

Yield: 6 to 8 Servings
