Tomato & Avocado Salad

1 large or 2 small ripe avocados, peeled, seeded, and mashed
1/4 cup extra-virgin olive oil
2 Tbs lime juice
1/2 tsp Dijon-style mustard
Salt and freshly ground pepper to taste
Tabasco sauce to taste (optional)
3 to 4 ripe tomatoes, sliced
Chopped cilantro (coriander leaves) for garnish

Combine and thoroughly mix the avocado, olive oil, lime juice, mustard, salt, pepper, and optional Tabasco sauce. Spoon over sliced tomatoes and garnish with chopped cilantro.

Yield: 4 to 6 Servings
