Grilled Vegetables in a Parmesan Basket
Remo Berdux, Executive Chef, Ritz Carlton Seoul

2 oz Parmesan Cheese, sliced
Assorted Seasonal Vegetables, grilled and sliced

Put the parmesan in a non-stick pan and heat it slowly over a low flame so that the parmesan can melt and develop into a golden brown crust. Take the parmesan crust out of the pan and lay it over a cup to form a basket. Let it cool down and remove it from the cup. Use the basket to serve grilled seasonal vegetables.

Yield: 2 Servings
