Grilled Bread

9 oz goat cheese
6 tsp grated orange peel, divided
9 Tbs olive oil, divided
6 Tbs orange juice
2 red onions (1 lb) sliced 1/4-inch thick
1 baguette, sliced 1/2-inch thick
4 cup arugula (or basil), trimmed
3/4 cup Kalamata olives (about 5 oz), pitted and halved

Mix cheese with 4 tsp peel, 1/4 tsp each salt and pepper, and 6 Tbs olive oil. Put in 13 x 9 inch dish. Add onions to marinade; turn to coat. Grill (about 10 min). Return to marinade. Brush bread slices on both sides with 3 Tbs olive oil. Grill both sides. Spread warm bread with cheese. Add arugula to marinade; toss to coat. Add olives; stir. Top cheese bread with arugula, onion & olive mix.
