Breadfruit Cooked in Coconut Milk
Dorothy's Kitchen




1 medium breadfruit
3 cups coconut milk
dash of salt

Peel rind from breadfruit, chop into cubes and place in saucepan. Cover with coconut milk and simmer on low heat until fruit is soft when pricked with a fork for one hour or slightly more. Add salt before serving. This is an excellent accompaniment to a ham dinner.

Yield: 4 Servings
