Guam Fried Rice
Dorothy's Kitchen




1 pound bacon, chopped into small pieces
6 garlic cloves, chopped
1 cup chopped green onions
3 eggs, slightly beaten
3 cups cooked and cooled rice
1 cup ham, diced thinly
1 can broken or chopped shrimp

Fry bacon until crisp. Remove bacon and pour off half the bacon fat. Fry garlic. Remove and discard. Fry onion in same fat. Remove and add to bacon. Spread eggs on botrom of pan as if preparing to make an omelet. Remove to plate. Add cold rice to fat and stir until all grains are coated with grease and grains are not sticking together. Add bacon, onion, and ham, mix well, always scraping bottom of pan to prevent sticking. Turn heat to low and add chopped egg pieces. Add shrimp. Remove from heat and serve.

Yield: 4 to 10 Servings
