Summer Rice Salad
This is a refreshing side dish for hot summer days


2 cups cooked rice - white, brown, or mix
1 cup quartered cherry tomatoes
1/3 cup chopped red onion
1/4 cup sliced black olives
3 Tbs apple cider vinegar
2 Tbs vegetable oil
2 Tbs minced fresh parsley
1/2 tsp sugar
1/2 tsp salt
salt & pepper to taste
leaf lettuce optional

In large bowl, combine first 4 ingredients. Set aside. In smaller bowl, combine next 5 ingredients. Pour this over rice mixture, toss to coat. Cover and chill for at least 2 hours. Serve in lettuce lined bowl, if desired.

Yield: 4 to 6 Servings
