Snow Peas with Fried Sage Dressing


1/4 cup extra-virgin olive oil
15 to 20 whole leaves of fresh sage
1 lb snow peas or sugar snap peas, trimmed
1 shallot, finely chopped
2 Tbs balsamic or red wine vinegar
Salt and freshly ground pepper to taste
1/4 cup pine nuts, lightly toaste

Heat the olive oil in a large skillet over moderate heat and fry the sage leaves until crisp. Add the snow peas and shallot and saute for 3 minutes. Add the vinegar and saute 1 minute. Remove from the heat, season with salt and pepper, and top with the pine nuts. Serve chilled or at room temperature.

Yield: 4 to 6 Servings
