Couscous Salad


1 cup instant couscous
1 cup water
2 Tbs olive oil
1 Tbs balsamic or red wine vinegar
1 to 2 cloves garlic, finely chopped
2 Tbs lemon juice
2 red, green, or yellow bell peppers, seeded, and finely chopped
1 small red onion, finely chopped
1/2 cup feta cheese, crumbled
1 Tbs finely chopped fresh basil
1 Tbs finely chopped fresh mint
Salt and freshly ground pepper to taste

Place the couscous in a mixing bowl. Combine the water, olive oil, vinegar, and garlic in a small saucepan and bring to a boil over moderate heat. Pour the water mixture over the couscous, stir to combine, and let rest covered for 15 minutes. Fluff with a fork and gently stir in the remaining ingredients. Serve chilled or at room temperature.

Yield: 4 to 6 Servings
