1 lb carrots, peeled and thinly sliced
1/4 cup fresh parsley
1 Tbs lemon juice
1/2 tsp lemon zest, grated
1 Tbs butter
Place carrots in a steamer basket over boiling water. Cover saucepan and steam 7 to 8 minutes or until carrots are tender. Transfer carrots to a bowl. Toss with remaining ingredients and salt and pepper to taste.
