Sweet and Sour Green Beans

1 lb green beans trimmed
3 to 4 slices bacon
1/2 medium onion, sliced
2 Tbs white wine vinegar
2 Tbs water
1 Tbs sugar or honey
salt and freshly ground pepper to taste

Boil or steam the green beans until tender, about 20 minutes. Meanwhile, fry the bacon until crisp. Remove the bacon from the pan and drain on paper towels. Discard all but 1 tablespoon of the bacon fat and saute the onion until tender, about 5 minutes. Add the vinegar, water, sugar, salt, and pepper, and scrape the bottom of the pan to dissolve any brown bits. Drain the beans and pour the sauce over them, tossing to coat well. Top with crumbled bacon.

Yield: 4 to 6 Servings
