Crispy Won Tons


1 lb ground beef or pork
2 cups fresh bean sprouts (the bigger white ones, not the little green ones), lightly chopped
2 medium carrots, shredded
1 stalk celery, diced
2 cloves garlic, minced
1 egg, beaten
2 Tbs soy sauce
salt and pepper
1 to 2 packages Won Ton wrappers
1 lb vegetable shortening
sweet & sour sauce for dipping

Mix raw meat, sprouts, carrots, celery, garlic, egg, soy sauce, salt and pepper in large bowl. Mix thoroughly with hands. Take one Won ton wrapper and place on sheet of waxed paper. Get a small finger bowl of water. Place one teaspoon of meat mixture in center of won ton paper. Fold bottom up, sides in, then dab water on top corner of won ton paper, roll up to seal. Set aside on waxed paper. Continue process until all won tons are assembled. Heat enough shortening in heavy-duty pan to approximately 1 inch depth. Drop in won tons, fry 2 to 3 minutes in batches until crispy and meat cooked through. Place in large bowl lined with paper towels to absorb oil. Add more towels between layers to keep warm and absorb oil. Serve while still warm with sweet and sour sauce and/or hot Chinese mustard.

Yield: 40 to 50 Won Tons
