Tomatoes au Gratin


4 ripe tomatoes, thickly sliced
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
4 Tbs olive oil
salt
pepper, freshly ground

Arrange tomato slices in an overlapping patter in a lightly oiled ovenproof dish. Season generously with salt and pepper, sprinkle with breadcrumbs, then cheese and finally olive oil. Cook under a preheated broiler for 5 to 6 minutes or until tomatoes are tender and surface is lightly browned.

Yield: 4 servings
