Risi e Bisi (Rice with Peas)

2 Tbs butter
1 Tbs olive oil
1 slice bacon, chopped
2 green onions, chopped
5 cups chicken stock
3/4 cup rice
1 1/2 cups frozen peas
1 Tbs fresh or dried parsley for garnish

Heat butter and oil in a large saucepan and cook bacon and green onions about 5 minutes. Add stock and rice, bring to a boil and stir well. Reduce heat, cover and cook over low heat for about 15 minutes. Add frozen peas and continue cooking until rice is tender, about 10 - 15 more minutes. Season with salt and sprinkle with parsley. Pass parmesan cheese with rice if desired.

Yield: 4 to 6 servings
