Honey Mustard Chicken


3 to 4 lbs chicken thighs
Salt and freshly ground pepper to taste
2 Tbs plus 1/4 cup olive oil
1/3 cup Dijon-style mustard
1/4 cup lemon juice
1/4 cup honey
1 tsp dried thyme

Season the chicken with salt and pepper. Heat 2 tablespoons of the olive oil in a skillet over moderate heat and brown the chicken pieces on all sides. Transfer the chicken to a roasting pan. Whisk together the remaining oil, mustard, lemon juice, honey, and thyme, and pour over the chicken. Bake in a preheated 350F oven for 1 hour, basting occasionally. Serve warm or chilled.

Yield: 4 to 6 Servings
