Chicken Chalakiles

1 whole chicken
4 cups ground rice
1 medium size onion, finely diced
4 cloves garlic, finely chopped
salt to taste
2 Tbs black pepper
2 Tbs Accent (MSG) (Optional, as many people are allergic)
1 cups achote seeds in 2 cups water

Boil 8 qts water in an 11 qts pan. In separate pot, boil chicken in 2 qts water. When done, remove chicken and dice. Set aside. Pour chicken broth into the 11 qts pot and continue boiling. Pour in 4 cups of ground rice, stirring constantly so as not to form into lumps. Saute onions, garlic and diced chicken in 4 tablespoons sesame oil. Mix achote seeds with 2 cups of water and wash seed until water is completely red. Pour colored water into the sauted ingredients and continue to cook until boiling. Pour all the ingredients into the 11 quarts pot and stir continously until broth is thick and cooked. Serve hot.

Yield: 65 to 75 servings (about 4.5 gallons!)
