Shrimp Kelaguen

1 lb fresh or frozen, boiled and cleaned shrimp...with the tails removed
1 small onion, chopped fine
2 small red chile peppers, chopped
3 Tbs Iemon juice
1 cup of grated coconut
salt to taste

Prepare shrimp by boiling. Chop into small pieces. Add other ingredients, increase the lemon juice and salt if needed. Serve well chilled on a lettuce leaf or fresh tortilla.

You can also use raw fish or a can of sardines, but shrimp is better and more traditional.

Yield: 4 Generous Servings
