Easy Lemon Chicken

Marinade
1 Tbs soy sauce
1/2 tsp salt
1/2 tsp pepper
1/4 cup salad oil
1/2 cup lemon juice
2 Tbs grated lemon peel
1 large clove garlic, crushed


Chicken
1/2 cup flour
1 tsp salt
1/4 tsp pepper
2 tsp paprika
1/2 cup butter, melted
3 1/2 lb fryer, cut in pieces


Combine marinade ingredients; add chicken pieces. Refrigerate at least one hour. Drain, reserve marinade.

In a heavy paper bag, combine flour, salt, pepper and paprika. Add chicken a few pieces at a time and shake to coat well.

Arrange floured chicken pieces in a single layer in greased shallow baking pan. Brush or drizzle with melted butter.

Bake uncovered for 30 minutes in 400F oven. Pour on marinade, turn pieces and bake an additional 20 minutes or until chicken is golden brown and tender. Serve with rice.

Yield: 4 to 6 Servings
