Marlin Kelaguen
Marie Perez, as printed in "What's Cookin: Academy of Our Lady of Guam Cookbook"

2 lbs. fresh marlin* steak
8 to 10 lemons, squeezed
1 tsp salt
3 to 4 red peppers, crushed
1 small onion, chopped

Cut marlin steaks into small thin pieces and place in a large bowl. Add lemon juice and squeeze mixture with hands so fish will absorb lemon juice. Add onions, salt, peppers and mix well. Place in refrigerator and chill. Serve chilled.
