Modern Waldorf Salad
This traditional apple, walnut and celery salad is updated with a spicy yogurt and low-fat mayo dressing.

1/4 cup low-fat mayonnaise
1/4 cup nonfat plain yogurt
2 Tbs orange juice
2 tsps grated orange peel
1/2 tsp Cajun seasoning or cayenne pepper to taste

1 head Romaine lettuce
1 grapefruit
1 pear, peeled, cored and diced
1 green apple, peeled, cored and diced
1 cup seedless grapes, halved (optional)
1/3 cup celery, chopped and diced 1/4 cup pine nuts

Mix mayonnaise, yogurt, orange juice, orange peel and seasoning in small bowl to blend. Cover and refrigerate. Can be made up to one day ahead.

Line large serving bowl with outer leaves of lettuce. Set aside. Chop enough remaining leaves into bite-size pieces to measure 6 cups. Place chopped lettuce in another large bowl. Use a small sharp knife to cut peel and white pith from grapefruit. Cut between membranes to release grapefruit segments. Cut segments in half. Place in bowl with chopped lettuce. Add diced pear, diced apple, grapes, celery and pine nuts. Add dressing to salad and toss to coat. Transfer salad to leaf-lined bowl and serve.
