Fettuccine with Arugula and Garlic

2 Tbs extra-virgin olive oil
2 Tbs butter
1 red onion, thinly sliced
4 to 6 cloves garlic, finely chopped
2 bunches arugula, about 2 cups packed
Salt and freshly ground pepper to taste
12 oz fettuccine or your favorite pasta, cooked according to package directions and drained

Heat the oil and butter in a large skillet over moderate heat and saute the onion until tender but still firm, about 3 minutes. Add the garlic and saute 2 minutes. Add the arugula, salt, and pepper, and saute for 2 minutes. Serve over drained pasta.

Yield: 4 to 6 servings
