Quick and Easy Vegetable Pasta


1 Tbs vegetable oil
8 ozs bow tie or shell pasta
2 tsp butter
2 garlic cloves, minced
1 red or green bell pepper, cut into chunks
1/4 cup sun dried tomatoes in oil, drained, chopped
8 medium white mushrooms, sliced
1/4 cup low fat milk
1/4 cup vegetable broth
4 ozs cream cheese, at room temp.
3 Tbs fresh basil, minced
3 Tbs fresh chives, minced
1 pinch salt
1 pinch pepper

Fill a large pot with water. Add oil and bring to a boil over high heat. Add pasta and cook according to package directions; drain and set aside. Melt butter in a large skillet over medium-high heat. Add garlic, bell pepper, sun dried tomatoes, and mushrooms; saute until soft, about 5 minutes. Add milk, vegetable broth, and cream cheese; stir until sauce is smooth and creamy. Add cooked pasta, basil, and chives; mix well. Reduce heat to low and simmer until all ingredients are heated through, about 2 minutes. Season to taste with salt and pepper.
