Fresh is Best Pasta

2 large, very ripe tomatoes, chopped
4 to 6 large cloves garlic, chopped fine and left raw
1 bunch of Italian parsley
1 bunch of green onions, chopped fine
1 pkg of turkey mild or hot Italian sausage (4-6 large links)
1 pkg (12 to 16 oz) bow tie pasta
Olive oil to taste
Shredded or grated Parmesan cheese, lots of it
salt and pepper to taste

In LARGE bowl, mix the first four ingredients with olive oil and stir to coat. Set aside. Squeeze sausage out of casings and brown, breaking up into smaller, bite-sized pieces. In the meantime, cook pasta according to directions. When pasta is done, drain, add to large bowl, add hot turkey (there will very little fat). Mix everything together. Season with salt and pepper and Parmesan cheese. Serve immediately with some bread or rolls.

Yield: 4 to 6 Servings
