Thai Lemon-Cilantro Sauce

1 red bell pepper, seeded and finely chopped
1 medium red onion, finely chopped
3 to 6 cloves garlic, finely chopped
1/2 cup chopped fresh cilantro
1/2 cup soy sauce
1/2 cup fresh lemon juice
1/4 cup unsalted roasted peanuts, very finely chopped
2 Tbs peanut or vegetable oil
2 Tbs sugar
1 tsp sesame oil
Crushed red pepper flakes to taste (optional)

Combine all ingredients and allow to rest for 30 to 60 minutes before use. Store covered in the refrigerator for up to 4 days. Makes about 3 cups.

Yield: About 3 Cups
