Marsala-Jalapeno-Mango Chutney aka Killer Chutney


4 medium fresh mangos
2 cups dry Marsala
3/4 cup golden raisins
1/2 cup light brown sugar, packed
2 cups granulated sugar
2 large cloves garlic, crushed
1/2 cup honey
2 tablespoons lemon juice
1/2 cup cider vinegar
1/2 cup minced ginger root
2 tablespoons diced sweet red pepper
1/2 cup finely chopped jalapenos, seeded (or more, to taste, can leave some seeds if you want it a bit spicier)
1 teaspoon salt
1 teaspoon black pepper

Peel mangos and remove flesh from pit. Chop flesh into chunks. Set aside. Place Marsala in saucepan. Reduce to 1 cup over high heat. Place mangos, reduced Marsala and rest of ingredients in large saucepan. Bring to a slow boil. Cook, stirring, 25 minutes. (or until of a consistency you like) Process in food processor or blender until desired consistency. (This takes about one fast pulse!)

Yield: 1 Quart
