Pickled Green Papaya
Dorothy's Kitchen

1 medium green papaya
3/4 cup water
1 cup onion, chopped fine
1 teaspoon salt
1 teaspoon sugar
1 teaspoon vinegar

Peel papaya and discard seeds. Cut into small slices. Place in water in a medium saucepan. Boil for about 2 minutes. Place in colander and remove water. Mix with the rest of the ingredients. Chill and serve cold.

Yield: 1 Pint
