Dressing for Pig, Turkey or Chicken

3 cups fried diced potatoes
1/2 cup chopped onions
1 tsp black pepper
1 tsp salt
1 small can pimientos, chopped
1 small bottle green olives, chopped
1 small can ripe olives, chopped
(for suckling pig leave some olives whole)
1 small bottle sweet pickles, chopped (1 cup)
1/2 bottle dill or sour pickles, chopped
1 small can peas
1 small can or 1/2 lb fresh cooked green beans
1/2 cup raisins
1 cup toasted bread, diced
1 lb ground beef
1 cup solid pack tomatoes

Cook beef and tomatoes about 10 minutes. Season with salt and black pepper to taste. Mix remaining ingredients, add to cooked beef and tomatoes and mix well. The dressing should be tart. If not tart enough for you, add 1 or 2 Tbs vinegar.

Yield: Enough for Average Sized Turkey
