Green Goddess Dressing
This dressing was created in the 1920's but it tastes as good today as it did then. A great partner for mixed greens, chicken salad or cold poached salmon.
1/2 cup mayonnaise
1/2 cup sour cream
1/3 cup fresh chives, coarsely chopped
1 green onion, coarsely chopped
1 garlic clove, peeled
1 Tbs tarragon white wine vinegar
1 tsp chopped fresh tarragon or 1/2 tsp dried tarragon
1 tsp sugar
1 tsp Worcestershire sauce
Combine all ingredients in blender and blend until smooth. Season dressing to taste with salt and pepper. Can be prepared 3 days ahead. Cover and refrigerate.
Yield: About 1 1/2 cups
