Vegetable Casserole


1 Egg plant, peeled and cut into 1 inch squares
1 green pepper, sliced in strips
1 red pepper, sliced in strips
1 yellow pepper, sliced in strips
1 large onion, cut in half and then sliced
2 zucchini, sliced
2 yellow crook neck squash, sliced
1/2 pound of button mushrooms
1 can of stewed tomatoes, original style
garlic powder
salt
pepper
sweet basil
your favorite cheese

Combine ingredients and pour into a large casserole or other oven-proof dish. Bake at 350F for an hour or until bubbly.



This makes a lot so I make one casserole with Parmesan and one with cheddar. Freezes well.
