Hawaiian Chestnut Ball

1 lb firm tofu, well-drained
1 cup cooked brown rice
1 cup shredded carrots
1 cup water chestnut, chopped
1/2 cup finely chopped green onion
1/4 cup finely chopped celery
1/4 cup finely chopped green bell pepper
2 Tbs food yeast flakes
1 1/2 tsps salt
1 clove garlic, minced

Mash tofu and combine with remaining ingredients. Mix well and form into balls. Bake on a sprayed cookie sheet at 350F for 30 minutes. Serve with Tomato Sauce or Tartar Sauce, if desired.

Yield: 8 Servings
