Vegetarian Tomato Chili

1 can (28 oz) stewed tomatoes
1 can (28 oz) tomato puree
3 Tbs vegetable oil
2 large onions, chopped
5 to 6 large garlic cloves, chopped
1 large green bell pepper, chopped
1 lb tempeh, diced or 6 Better BurgersŪ, diced
1 can (15 oz) tomato sauce
2 Tbs chili powder
2 Tbs ground cumin
1/4 cup parsley, chopped
salt and pepper to taste
2 cans (16 oz each) beans (kidney, black, etc.)

In a large pot, heat oil. Add onions, garlic and green pepper, saute until tender. Add tempeh or Better BurgersŪ and brown lightly. Add all remaining ingredients except beans and 1/2 of the parsley, cover and simmer about 30 minutes. Adjust seasonings as you go. Just prior to serving, mix in beans and remaining parsley. Serve in large rimmed bowl or in individual bowls, garnish with organic corn chips or tortillas.
