Quick Spanish Rice

2 cups quick cooking brown rice (Uncle Ben's)
1 1/4 cup water
2 Tbs vegetable oil
1 cup vegetable juice (V8)
1/4 cup onion, diced
1 packet taco seasoning
2 cloves garlic, minced
1/4 cup red bell pepper, diced
1/4 cup cilantro, chopped

To a medium saute pan add the oil, over medium heat saute the onions until just soft, add the garlic and finish until just golden. Add the rice and continue to stir until all grains are coated. Add water, vegetable juice and seasoning and bring to a boil, immediately cover and lower the temperature and cook over low heat until liquid is mostly absorbed. Add the bell pepper and 1/2 of the cilantro and finish cooking until all moisture is absorbed. Let stand off of heat with cover ajar for at least 10 minutes. Serve on platter or individual plates garnished with remaining cilantro.

Yield: 8 to 10 Servings
