Baked Tofu Burgers

olive oil spray
cornmeal for dusting
14 oz firm tofu, drained & mashed
2 slices whole grain bread, in small pieces
1/2 cup lowfat soy milk
1/2 cup sunflower seeds, coarsely ground
1/2 lb mushrooms, finely chopped
1/2 cup wheat germ
10 scallions, chopped
1 Tbs whole wheat flour
1 Tbs oil (canola, flaxseed or olive)
2 cloves garlic, minced
3 Tbs soy sauce or tamari

Preheat oven to 375F. Pan spray a 9" X 13" baking sheet and dust with cornmeal. In a small bowl, soak the bread pieces in the soy milk. In a large bowl combine tofu, sunflower seeds, mushrooms, wheat germ, scallions, flour, oil, garlic, soy sauce, and bread and milk mixture. Mix all ingredients thoroughly. Divide and form into 8 patties and place on baking sheet. Bake 40 minutes or until browned and firm.

Serve burgers as you would traditional ones with fat free condiments such as ketchup, mustard, lettuce, tomato, red onion, pickles, etc.

Yield: 8 Patties
