Super Soy Burgers

olive oil spray
1 1/2 cups soy beans, cooked and mashed
3/4 cup brown rice, cooked and cooled
1/2 cup cracked wheat or bulgur, cooked
3 Tbs egg substitute or 1 large egg
3 Tbs soy sauce or tamari
5 scallions, minced
1 Tbs nutritional yeast
1 Tbs cornstarch or arrowroot
2 Tbs dijon mustard
2 Tbs mixed fresh herbs, chopped
salt and pepper, to taste

Preheat oven to 400F. Pan spray a 9" X 13" baking sheet. In a large bowl combine all ingredients and mix thoroughly. Let the mixture stand for 15 minutes. Divide and form into 8 patties using wax paper and place on baking sheet. Bake 30 minutes or until golden brown and firm.

Serve all above Burgers as you would traditional ones with fat free condiments such as ketchup, mustard, lettuce, tomato, red onion, pickles, etc.

Yield: 8 Patties
