Yap Islands Pumpkin Pie Muffins

3 cups Flour
1/4 cup Raisins
1 1/2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Ground Cloves
1 tsp Nutmeg
1/4 to 1/2 tsp vanilla
1/2 tsp Ginger
1 can (1 lb) Pumpkin Puree, or 1 lb local Pumpkin, seeded and pureed
2 cups Sugar
3 Eggs
1/4 cup Oil
1/2 cup Rain or Bottled water (just not tap water!)

Preheat the oven to 350F, combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger in a large bowl. In another bowl, beat together pumpkin puree, sugar, eggs, oil, vanilla and water. Add the pumpkin mixture to the flour mixture and blend by hand (not mixer). Stir in raisins. Spray the muffin pans with non-stick spray and spoon in batter. Bake for 15-19 minutes, checking for doneness.

Yield: 17 to 19 Small Muffins or 12 Large Muffins
