Maryland Crab Cakes
Bill Bradford, Manager, Jan Z's by the Sea

These are the great crab cakes that are served at Jan Z's Restaurant at the Agat Marina

2 cups Japanese bread crumbs
milk, sufficient to moisten crumbs
1 lb crab meat
1/4 tsp salt
1 tsp Old Bay seasoning
1 Tbs baking powder
1 Tbs chopped parsley
1 Tbs Worcestershire sauce
1 Tbs mayonnaise or salad dressing

Moisten bread crumbs with milk. Combine all ingredients either by hand or by turning in with a spatula. Do not whip or beat ingredients together as this will break down the crab meat. Shape into patties. Cook in vegetable oil in frying pan or in deep fryer.

Yield: 4 to 6 Servings
