Quiche Lorraine
While the classic Quiche Lorraine contains no cheese, this is a popular variation that is accepted by many.


3 - 4 slices of bacon
3 slices of Swiss or Guyere Cheese
1 pastry crust
2 eggs
1 tsp flour
pinch of nutmeg
1/2 tsp of salt
pinch of cayenne
1/2 cup light cream
1/2 cup milk
1 Tbs melted butter
parsley

Fry bacon til crisp. Drain and crumble to bite size pieces. Cut cheese in to similar size pieces. Place bacon and cheese in crust. Beat together eggs, flour, nutmeg, salt, cayenne, cream and milk only until combined (overbeating causes bubbles on top). Stir in melted butter. Pour over bacon and cheese. Bake in a preheated 400F degree oven for 10 minutes, then reduce heat to 350F degree and bake for a further 20 minutes or until a knife inserted in filling comes out clean.

Yield: 4 to 6 Servings.
