Beef Eye Round Roast
The cooking instructions on this sound odd but it works great. You can often find Eye Round Roast at Cost-U-Less for a good price. You can make excellent French Dip Sandwiches from the leftovers.


3 to 4 lb eye round roast
2 to 3 cloves garlic (add more if you love garlic)
Salt
Pepper

Cut 2 to 3 slits in the meat and insert a garlic clove in each. Let stand at room temperature for 1 1/2 hours. Meanwhile, preheat oven to 500F. Rub roast well with salt and pepper. Place meat in open roasting pan. Do Not Cover, Do Not Add Water! Place in oven allowing 5 minutes cooking time per pound. DO NOT OPEN DOOR! After high temp roasting, turn off oven and allow meat to remain in the closed oven for 1 1/2 to 2 hours.

Slice and serve as you like.

Yield: Approximately 6 to 8 Servings
