Green Chili Turkey Casserole

This dish is easy, delicious and a great way to use leftover turkey

6-12 Corn tortillas torn in fours (or to fit) Rip as you go!
1 lb Cheddar cheese, shredded
3-4 cups cooked turkey, diced
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup sour cream
1 can diced green chilis
1 onion, chopped
1/2 cup milk (low fat is okay)
1 3-quart buttered casserole (cooking spray is fine)


Preheat the oven to 350 degrees. Combine turkey, soups, sour cream, chilis, onion and milk together in a bowl. This is a layered dish so start by lining the bottom of the casserole dish with ripped tortillas, making sure they overlap. Then add 1/3 of the casserole mixture and cover with 1/3 of the cheese. Repeat the next layer with ripped tortillas, casserole mixture and cheese. The final layer is just the turkey mixture topped with cheese. Cover with foil and bake for 45 minutes, remove foil and continue baking for an additional 15 minutes uncovered.

Yield: 4 - 6 servings
