Calamai - Coconut Pudding
Dorothy's Kitchen




2 cups cornstarch, or rice
1 coconut (milk only)
4 cups water
sugar to taste
2 drops lemon extract

Mix all ingredients in a pan and heat over a low heat. Stirring constantly is necessary until mixture comes to a boil and thickens. Pour into shallow pan and cool. Cut into squares or wedges and serve.

Yield: 10 Servings
